National Wines in Oakville has been working with wine lovers across the GTA to help them make and enjoy their very own wine since 1995. Last year, the De Civita family took ownership and transformed the business into an operating urban winery. Now, they have started the second phase of the transformation and have created a fully operational urban winery with a very distinctly unique production model.
This independent, family run and operated winery produces wines on a very simple, yet revolutionary idea: every fine wine they produce is made one single batch at the time with private vinting and is carefully vinified without the use of added sulfites and other preservatives found in commercial wines that usually cause headaches and other adverse effects like dehydration. This is all done in true organic form.
Now, you can enjoy “clean” wines, privately made for you in small batches, with all the taste but without the harmful additives and high prices of commercial wines.
“We make every batch of wine by using only freshly pressed grape juice, optimum pH levels, using a full primary and secondary fermentation. This along with tighter filtration and cold stabilization reduces all residual sugars which results into a crisp, clean tasty wine” explains winemaker and General Manager Vincenzo De Civita. “No kits or concentrates in our winery. We make wine in the traditional all natural method and use only fresh juices that we import from the best wine regions in the world”.
